Setting up your City BBQ buffet

Picked up a catering order but not sure how to set it up? Read on for our expert tips for setting up a City Barbeque catering spread!

- Plates and bowls
- Cornbread and buns
- Salad and dressing
- Cold sides
- Hot sides
- Pork
- Brisket
- Condiments
- Napkins and utensils
Here's a handy visual to help with setup:

SETTING UP YOUR SPREAD
- Use the provided butcher paper to cover your table
- Set out wire racks on table and place one large empty pan in each rack
- Fill each large pan about a quarter-full of water
- Place two pans of food in each large water-filled pan
- Remove sterno lids, carefully light fuel, and place one under each wire rack
- Lay out the rest of your spread
- Write labels for each item right on your butcher paper
- Keep everything covered until it’s time to eat
